Manx Recipe

might be worth a try...

This was found on Laxey Shools website...

Callister’s Cold Tea Cake


1½ lbs dried fruit

8oz Sugar (can be reduced to suit taste)

2 Manx eggs

¾ pint of tea

1ib Manx self raising flour


Optional extras 2 oz Glace Cherries


Make ¾ pint of tea and soak the fruit in it overnight. Add sugar, eggs and flour mix thoroughly. Line cake tin with greaseproof paper and pour in mixture. Bake in preheated oven at 190C for approximately 1hour 15 minutes, checking regularly. Once cooked, turn onto wire to cool.


Best served with a cup of Manx tea, spread liberally with Manx butter. Sit down and enjoy!
